Intermittent blindness. That's what happened to Alejandra Richards after she began taking her medication for lupus. It's something that often happens after taking certain medications but doctors don't always tell you about it.
She sort of freaked out at first, but now when it happens, she's learned how to deal with it.

Those are the words Eileen Ley lives by.
Eileen and two of her siblings were diagnosed with blindness since they were very young. They also had another sibling with a physical disability. She says that taught her not to focus so much on her blindness.
Eileen, along with her husband who is also blind, developed courses to help Blind folks succeed in business, and how to network effectively. These include 10 tips for Blind Diners, as well as savvy mealtime conversations.

She's been through plenty. Diabetic since six, and a kidney transplant recipient, and total blindness. Her first date with her now-husband was in a hospital. But, Shandi Ann remains optimistic.
She shares her grandmother's Shepherd's pie recipe with a few updates...including hot sauce, and cauliflower instead of mashed potatoes.

Chef Ronald Kaźmierczak is a classically trained professional chef in Buffalo, New York.
He found out he had retinitis pigmentosa when he was a mere nine years old. If he had to tell his nine-year-old self something he has learned, it would be to "take your time."
